Pineapple Pico de Gallo Avocado Toasts

Ingredients
For Pineapple pico de gallo

diced tomatoes

cup
diced fresh pineapple

orange mini sweet peppers
2
tablespoons
poblano pepper
2
green onions

cilantro

salt
For Avocado toasts
1
baguette
sliced into 3/4 inch slices
1/4
cup
softened butter
2
ripe avocados
1
teaspoon
lemon or orange juice
1/2
teaspoon
salt
Instructions
Mix all pico de gallo ingredients together into a bowl and stir to combine. Cover and refrigerate until ready to serve.
Butter one side of baguette slices and place under a broiler or toaster oven until golden brown.
Meanwhile, mash avocados with lemon juice and salt.
Spread mashed avocado onto each baguette slice and top with pico de gallo. Serve immediately.
