Pineapple Pico de Gallo Avocado Toasts

Ingredients

For Pineapple pico de gallo

  • 1 cup diced tomatoes
  • 1 cup diced fresh pineapple
  • 2 orange mini sweet peppers
  • 2 tablespoons poblano pepper
  • 2 green onions
  • 1/3 cup cilantro
  • 1/2 teaspoon salt

For Avocado toasts

  • 1 baguette sliced into 3/4 inch slices
  • 1/4 cup softened butter
  • 2 ripe avocados
  • 1 teaspoon lemon or orange juice
  • 1/2 teaspoon salt

Instructions

  • Mix all pico de gallo ingredients together into a bowl and stir to combine. Cover and refrigerate until ready to serve.
  • Butter one side of baguette slices and place under a broiler or toaster oven until golden brown.
  • Meanwhile, mash avocados with lemon juice and salt.
  • Spread mashed avocado onto each baguette slice and top with pico de gallo. Serve immediately.
