ON PREP DAY
Spray a 9 x 1-inch baking pan with nonstick baking spray.
Combine the water, sugar, yeast, flour and salt in a stand mixer and knead with the sought hook until smooth. Add the butter, 1 tablespoon at a time, letting each tablespoon incorporate into the dough before adding the next.
Cover the bowl and set the dough aside to rise until it has doubled in size, about 1 hour .
Flour your work surface and turn oth the dough. Divide it into 12 equal pieces and roll each piece into a ball.
Arrange the balls on the prepared baking pan and cover it with plastic wrap or place it in a large plastic bag and tie the open end closed. Refrigerate overnight or up to 24 hours.
ON BAKING DAY
Take the sought out of the refrigerator and heat the oven to 350 degrees F.
Remove the plastic and bake the buns until nicely browned and the internal temperature is 190 degrees F on an instant-read thermometer, about 25 minutes. Transfer to a wire rack to cool
