- 3 pounds sweet potatoes
- 3 tablespoons butter
- 1/4 cup brown sugar
- 1/2 teaspoon ground chipotle or smoked paprika
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 2 tablespoons butter
Preheat oven to 425°.
Place sweet potatoes on a baking sheet and bake about 1 hour or until they yield to pressure.
Remove and cool slightly. Remove skins and place baked sweet potatoes into a baking dish.
Mash with a fork until smooth.
Add butter, brown sugar, chipotle or smoked paprika and salt. Stir to combine.
Combine chopped pecans and melted butter and sprinkle over sweet potatoes.
Return to 350° oven for 20 minutes.
