Cut chicken into 1 1/2 - x 5-inch strips or into about 48 (1 1/2-inch) cubes. Whisk together flour and next 4 ingredients. Whisk in 3/4 to 1 cup of water or enough water to form a slightly runny batter. Pour canola oil to a depth of 1/2 inch in a large deep skillet; heat to 350 degrees. Dip chicken in flour mixture. Fry chicken, in batches, in hot oil 2 to 3 minutes on each side or until done and golden brown. Drain on paper towels.
For Honey Sauce
Combine all ingredients in a small saucepan, and cook over low heat for 4 to 6 minutes. Serve chicken with honey sauce.
