Ingredients

  • 5-6 boneless skinless chicken breasts (about 3 pounds)
  • 8 oz Pacific Foods Simply Stock
  • 1/2 cup orange juice concentrate thawed
  • 1/3 cup tequila
  • 1 tablespoon lime juice
  • 1 jalapeño seeded and diced
  • 1 teaspoon granulated garlic
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt

Instructions

  • Spray the slow cooker with non-stick cooking spray. Layer chicken breasts in slow cooker.
  • In a small bowl add remaining ingredients and whisk together. Pour over chicken.
  • Cook on high for 3-4 hours or low for 5-6 hours or until chicken is cooked through.
  • Remove chicken from slow cooker, reserving liquid. Allow to cool slightly. Pull chicken apart using 2 forks.
  • Place in a large bowl. Add about 1 cup of reserved liquid over chicken and toss to coat.

Notes

Chicken can be served in tostadas, tacos, enchiladas, chicken and rice or sandwiches.
