During the summer we bale hay to have feed for our cows during the winter. My husband and older boys do all of the irrigating. My husband cuts and bales and hauls the hay with help from the boys. Things breaks down, tires go flat, supplies are needed and that’s where I come in. Now don’t get the idea that I’m some sort of superwoman mechanic, it isn’t like that. I run (okay I drive, I’ve established I only run when being chased by crazy cows!) and get the parts or supplies or drop off tires to be repaired and that kind of thing. So I spend a lot of time driving back and forth and can’t seem to get the regular things accomplished. That puts me in search of the quick and easy meals and desserts. Homemade ice cream fits the bill every time. It is a little unusual for me to post a peanut butter recipe without chocolate but let me tell you, this Peanut Butter Ice Cream is so utterly delicious it stands alone without the chocolate. It’s so cool and creamy and in my book, ice cream perfection. Of course it’s easy and pretty much uses stuff you probably have in your pantry and refrigerator, ready in 30 minutes, and there’s no better summer dessert than ice cream. I’ve professed my love of the counter top ice cream maker before. If you don’t have one, get one, they are not that expensive! I usually stir the ice cream together and pour it in the ice cream maker while I make supper. Just before serving supper, I pour it into a plastic container and put it in the freezer to set up a little more. Then when the guys start requesting dessert, it is ready to go. This summer I’ve been doing lots of experimenting with ice cream flavors beyond vanilla and it’s been a fun and fattening journey. If only I would experiment with exercise to counteract my ice cream consumption! My current excuse it’s it is too hot to exercise and later it will be to cold, right? Yep, that’s what I’m thinking. Now I have to get up and go get another bowl of this Peanut Butter Ice Cream!
Peanut Butter Ice Cream
Ingredients:
- 1 1/2 cups half and half
- 1 cup whole milk
- 1 can 14 oz sweetened condensed milk
- 1 cup peanut butter (I used crunchy, use creamy if you like)
Directions:
Add all ingredients into a food processor or blender and process for about 1 minute or until all ingredients are thoroughly combined. Pour into ice cream maker and follow manufacturer directions. Mine sets up to soft serve consistency in about 30 minutes. Serve immediately or pour ice cream into a container, cover and place in the freezer until ready to serve.
*Of course serving it with a big ol’ dollop of hot fudge sauce never hurt anything if you gotta have it!

I have only 1 peanut butter dessert that I think is good enough to stand alone without chocolate and that’s my peanut butter pie. Your dessert just might be #2 though!!

This looks and sounds delicious! Chocolate Peanut Butter ice cream is my ultimate ice cream but with a peanut allergy in the family I don’t get the opportunity to indulge like I used to. My thighs are greatful but my taste buds miss it.
I do have a PB substitute that I may try with this recipe so I can get my fix.
I also got on the homemade ice cream maker bandwagon a couple of weeks ago. I’ve already made two batches (banana chocolate chip and Oreo cookie crumb). Delicious and ridiculously easy!!

I love reading about your ranch life, Milisa (I know…I have said that before!). This ice cream looks so refreshing and delicious! I can only imagine how hard it must be for your family to work outdoors all day in this heat! I bet they come in starving and exhausted. I know they love the home-made ice cream!
Kim, it’s always nice to hear that you like reading about our ranch life. It has been unusually hot here just like everywhere this summer. I think the hardest part is eating so late and with teenage boys I haven’t found a time when they are not starving!
