I was inspired to make beer bread when I accidentally knocked the cap off of a beer bottle early in the day. I put plastic wrap over it and decided it would not go to waste, I could make beer bread. I think I’ve made beer bread before but it’s been so long that I don’t remember. I will be making this more often, we all loved it! I had it for a mid-morning snack with a little butter. This recipe was so simple but the flavors of the beer and the cheese are really there. I think you could easily make these into muffins or drop biscuits. Use your choice of cheese, cheddar would be awesome and use whatever beer you have handy, I used Moose Head, it’s my favorite. I can’t wait until supper, I am going to use it for grilled cheese sandwiches maybe along side some tomato soup, now doesn’t that sound good?
Colby-Jack Beer Bread
Ingredients:
3 cups self-rising flour *substitution for using all purpose flour below
1/3 cup sugar
2 cups colby-jack cheese, shredded
1/4 cup butter, melted
12 oz beer
Cooking Directions:
Pre-heat oven to 350 degrees. In a large mixing bowl, add flour, sugar, and cheese stirring to combine. Add melted butter and beer and stir just until combined. Pour into a greased loaf pan and bake for 55 minutes to one hour. Remove from pan onto a wire rack to cool. Slice and serve with butter.

*I often forget to buy self-rising flour. You can use 3 cups of all purpose flour plus 4 1/2 teaspoons baking powder and 3/8 teaspoon salt.

Ok I made this bread it is out of this world good, so easy. Had company one afternoon and I couldn’t wait for them to try it. We all set down at 5 in the afternoon to have your bread warmed and buttered, everybody raved over it. Thank you for new staple in our house.

This looks fantastic! Do you know, however, if I’d be able to use all-purpose flour with any other adjustments, if I don’t have self-rising flour? I’ll admit I’m not a baker and I usually use a bread machine to make any bread, so I’m not “up” on what kinds of substitutions can be made — any suggestions would be appreciated!
If none can, I’ll just have to wait till I’m out grocery shopping next to pick up self-rising flour. (I was just kind of hoping to make some tomorrow without having to go out! Hahaha.)
