Broccoli with Toasted Walnuts

I’m sure you all have noticed the dessert recipes far outweigh the vegetable dishes around here.  We are not big vegetable eaters but funny enough my kids like vegetables that most kids seem to hate, such as broccoli and spinach.  This is my favorite way to eat broccoli.  I’ve always loved green beans with almonds so why not broccoli and walnuts.  The buttery, toasted walnuts just go so well with the broccoli.  I usually buy frozen broccoli but fresh works just as well.  I also love that this is a dish that can be ready in about 10 minutes.  It really rounds out a steak and baked potatoes kind of meal.  Give this a try next time you have broccoli on the menu, I think you’ll like it.

Broccoli with Toasted Walnuts

Ingredients:
4 cups broccoli

1 cup water

1 cup walnuts, toasted and chopped

1/4 cup butter

1/2 teaspoon salt

Place broccoli and water in a microwave safe, covered bowl and microwave for 5 minutes.  Drain water.  Place butter in a saute pan over medium heat.  Add broccoli and toasted walnuts and salt to pan, tossing to coat in butter and cook until broccoli is heated through.  Serve immediately.

I LOVE broccoli! My favorite way to eat it is roasted in the oven with a little olive oil and salt and pepper. When it comes out of the oven sprinkle it with parmesan cheese…YUM! I’ve never had it with walnuts. Your recipe looks amazing, Milisa!
