I promised more ice cream recipes and here is the first of several. I made two attempts at homemade chocolate ice cream before I was happy. Yeah, I had to eat two batches of chocolate ice cream, it was difficult. Okay, maybe difficult to button my pants after that. I bought some cinnamon chips that were on sale. I had never tried them before. Man are they good. I like to have a little crunch in my ice cream, but it would be easy to melt the cinnamon chips with the chocolate and have a smooth and wonderfully flavorful ice cream. This would be a great addition to your July 4th festivities, a new favorite that everyone will love!
Chocolate Cinnamon Chip Ice Cream
Ingredients:
2 cups whipping cream
1 cup whole milk
1 tablespoon vanilla
1 cup sugar
1/2 cup cocoa powder
4 oz bittersweet chocolate, broken into pieces
1 cup cinnamon chips
Directions:
Combine whipping cream and milk in a large mixing bowl, or large glass measuring cup. Microwave for 3 minutes, stirring at one minute intervals. Place blade attachment into food processor and add sugar, cocoa powder and bittersweet chocolate. Pulse for about a minute, or until chocolate is chopped fine. Add vanilla into cream mixture and pour into processor while running at a low speed. Process until mixture is well combined and chocolate is melted, 30 seconds to a minute should get it. Pour mixture into a bowl, cover and refrigerate for 30 minutes. Pour chilled mixture into ice cream maker. When ice cream has started to freeze, stir in cinnamon chips. Continue to process until frozen. Store in an airtight container until ready to serve.
*If you prefer smooth ice cream with no crunch, add the cinnamon chips in with chocolate and they will melt, but you’ll have all the cinnamon and chocolate flavors.

This looks wonderful! I made something similar a few months ago (with ground cinnamon, not cinnamon chips). I think I’ll make this next time I make ice cream.
Had the opportunity to taste this stuff — IT WAS AMAZING!!!! Forget Haagen Dasz, this was hands-down the best, purest, densest and deep chocolate ice cream I’ve ever had. It was a three-way (pun intended!) between chocolate mousse, rocky road and cinnamon toast, and best of all, it was healthy homemade! Congrats, Missy, you outdid yourself here.
