Easy Vanilla Bean Ice Cream

This is the easiest ice cream in the world.  Just a few ingredients, no eggs, and no cooking, but full of vanilla flavor.  I made some for my oldest son’s birthday and everyone loved it.  My family prefers vanilla ice cream, especially if it’s homemade, but you could add your favorite berries or bananas or other fruit in the mix.  My neighbor adds in crushed up candy bars after it freezes, I think I might love that too much, so I haven’t tried it yet.  Ice cream is so versatile and you can easily make your own unique flavor combination.  I am dreaming up new ones right now….stay tuned!

Easy Vanilla Bean Ice Cream

Ingredients:

2 cups whole milk

1 cup half and half

1 14 oz. can sweetened condensed milk

1 vanilla bean

Directions:

In a large mixing bowl add milk, half and half and sweetened condensed milk.  Scrape seeds from vanilla bean into milk mixture.  Whisk together until well combined.  Pour into ice cream maker and in about 30 minutes you’ll have delicious ice cream!  If you have any left, just place in an airtight container and place in the freezer.

And that’s it? That is the easiest ice cream to make. Of course, I don’t have an ice cream maker. So I guess I will just need to roll the coffee can back and forth with my daughter. ;)

Mmm… topped with a strawberry sauce… It’s all good.
