Hi Skylar,
That sounds amazing! I have cut sugar out of my diet in the last year and I am loving your substitutions to make it diabetic friendly. Thanks for stopping by with your rating and experience.

I had to make this keto diabetic friendly and had to change it done and worked out great. I used the 8 cups diced zucchini, 3TB lemon juice, 1/2 C brown sugar substitute, 2TB xanthum gum instead of corn starch, 2 teaspoon cinnamon. topping: 1C almond flour, 1C brown sugar substitute, 1C steel cut oats ( now the only thing I could find at the moment was a steel cut quick oat with flax seeds), 1 teaspoon cinnamon, 1/2 teaspoon salt, 1/2C butter (cold is better). Then I just did recipe as directed. baked for 40 min. The boyfriend who is the diabetic says it tastes really good.

If anyone can peel and remove the seeds for eight cups of zucchini in 10 minutes, I want to shake their hand. Plus measure and combine all the other ingredients!!!
Regardless, it’s delicious and well worth the prep work!
