Pork Cutlets with Honey Chipotle Sauce

Ingredients

  • 2 Boneless Pork Chops
  • 1 sleeve Ritz Crackers crushed into crumbs
  • 1/2 cup all purpose flour
  • 1.2 teaspoon granulated garlic
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon water
  • 3 cups vegetable oil for frying

For the Honey Chipotle Sauce

  • 1/4 cup butter
  • 1/4 cup honey
  • 1 1/2 teaspoons apple cider vinegar
  • 1 1/2 teaspoons ground chipotle or chili powder
  • 1 1/2 teaspoons granulated garlic
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  • Slice pork chops in half to make thin cutlets.
  • Place on a cutting board, pound each cutlet thin with a meat mallet. Top with a piece of plastic wrap to keep from splattering. Pat dry with a paper towel.
  • Place crushed RItz crackers in a shallow dish. Add flour and seasonings to another shallow bowl and mix to combine. In a third bowl, beat eggs with water. Line a baking sheet with parchment paper and set aside. 
  • Dredge each pork cutlet into seasoned flour mixture, coating both sides. 
  • Dip into egg mixture, coating both sides and then into the crushed Ritz crackers, pressing the cracker crumbs into the pork. 
  • Place cutlets in a single layer onto the parchment lined baking sheet.
  • Heat vegetable oil in a large skillet over medium heat using an oil thermometer to heat the oil to 375°.
  • Fry the pork chops in the hot oil a few at a time until golden brown and crispy, about 2-3 minutes per side. Use a digital meat thermometer to cook pork to 145° internal temperature.
  • Transfer to a baking sheet lined with a wire rack and paper towels to drain excess oil.
  • Make the Sauce: In a small saucepan, melt butter over medium-high heat with honey, apple cider vinegar, ground chipotle, smoked paprika, granulated garlic, salt, and pepper. Cook for 4-5 minutes until the sauce is heated through and well combined.
  • Spoon honey chipotle sauce over the top of the pork cutlets to serve.

Notes

  • Air Fryer Instructions: Spray pork cutlets with olive oil and place in a preheated air fryer, cook at 350° for 5-7 minutes or until pork reaches 145° using a digital meat thermometer. 
  • Oven Instructions: Spray pork cutlets with olive oil and bake on the parchment lined baking sheet at 375° for 10-15 minutes or until pork reaches 145° using a digital thermometer and is golden brown.
  • Spicy: Add chili flakes or cayenne for a more spicy sauce.  
  • Mild: For a milder sauce use chili powder in place of the ground chipotle. 
  • Store any leftover pork cutlets and sauce separately in airtight containers in the refrigerator for up to 3 days.
  • To reheat, place the pork cutlets on a baking sheet and bake in a preheated oven at 350°F for about 10 minutes or until heated through. Warm the sauce in a saucepan over low heat, stirring occasionally.
