Burrito Bowls

Burrito Bowls are one of our favorite dinners to make with ground beef, beans, rice, Mexican corn and our favorite toppings. A quick dinner that the whole family loves.

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion diced
  • 1/2 cup picante sauce or salsa
  • 1/2 cup water
  • 1 tablespoon granulated garlic
  • 1 tablespoon ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 16 ounce can beans rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 3 cups cooked rice
  • Skillet Mexican Street Corn
  • Cilantro

Instructions

  • Brown ground beef in a large skillet over medium-high heat. Stir often, breaking up into crumbles as it cooks. Add diced onions when the ground beef is well browned. Continue to cook, stirring occasionally until onions are softened.
  • Add picante sauce, water, garlic, cumin, chili powder, salt and pepper to the browned ground beef, stirring to combine. Cook for 5 – 8 minutes, lower to simmer and keep warm until ready to serve.
  • Cook the rice according to package directions. Make the Mexican Corn or heat up frozen or canned corn. Rinse and drain the beans. Heat beans in a small skillet or pan over low heat with a few tablespoons of water. Stir occasionally until heated through.
  • Layer rice in the bottom of the bowls, top with beef mixture, beans, corn, cheese, tomatoes, sour cream and cilantro plus any other toppings that you like.

Notes

  • Storage: Store leftover ground beef, beans, rice and corn in an airtight containers in the refrigerator up to 3 days.
  • Reheat: To reheat, place ground beef, rice, beans and corn in a skillet with a few tablespoons of water, cook over medium heat, stirring occasionally until heated through.
  • Variations:
  • Protein: Substitute ground chicken, ground turkey or ground pork.
  • Rice: White rice, brown rice or Cilantro Lime Rice are great options.
  • Beans: pinto beans, Black Beans or Kidney Beans.
  • Fresh Vegetables: Diced bell peppers or jalapeños can be added in with the onions.
  • Toppings: Candied Jalapenos, sliced green onions, sliced black olives, tortilla strips, Fritos.
