Ingredients

Sweet and Sour Sauce

  • 1 cup water
  • 1/4 cup pineapple juice
  • 3/4 cup granulated sugar
  • 1/2 cup ketchup
  • 1/3 cup apple cider vinegar
  • 1/2 teaspoon soy sauce
  • 1/4 teaspoon kosher salt
  • 2 tablespoons corn starch

Pork Stir Fry

  • 1 tablespoon olive oil
  • 3/4 cup diced bell peppers
  • 3/4 cup diced onion
  • 1 1/2 pounds ground pork
  • 2 teaspoons granulated garlic
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 3/4 cup pineapple tidbits drained
  • 3 cups cooked rice
  • 1 tablespoon sesame seeds optional for garnish
  • chopped fresh cilantro optional for garnish

Instructions

  • Make the sweet and sour sauce by adding water, pineapple juice, sugar, apple cider vinegar, soy sauce, salt and corn starch to a saucepan. Whisk together and cook over medium heat until mixture comes to a boil. Continue whisking until sauce is thickened. Remove from heat and set aside.
  • Dice the onions and bell peppers and add to a skillet with olive oil. Cook over medium-high heat, stirring often until vegetables are softened, about 5 minutes.
  • Add the ground pork to the skillet and season with garlic, salt and pepper. Crumble pork as it cooks with a wooden spoon, stirring occasionally until cooked through and no longer pink.
  • Pour sweet and sour sauce over the pork mixture and add the drained pineapples. Cook for 5 minutes until sauce is bubbly.
  • Serve over rice and garnish with sesame seeds and cilantro.
