Lentils with Bacon & Onion
I love to add bacon to my lentils and a little onion and it is such a simple dish but tastes incredible. Good for you too with lots of protein and fiber.

- 1 pound dried lentils washed and picked through
- 8 cups chicken broth
- 10 slices Petit Jean Thick Sliced Bacon
- 1 medium onion coarsely chopped
In a large Dutch oven, add lentils and chicken broth over medium-high heat and bring to a boil.
Reduce heat to medium-low, cover and continue to cook, stirring occasionally for 45 minutes to one hour.
Meanwhile, fry bacon in a large skillet slowly over low heat. Remove to paper towel to drain.
Add onions to skillet and cook in bacon drippings over low heat until they become translucent, stirring occasionally.
Remove onions with a slotted spoon and stir into lentils.
When lentils are tender, remove from heat and stir in bacon.
Serve with skillet cornbread.
