Add ground beef to a skillet and cook over medium-high heat, breaking the ground beef up as it cooks. Cook until well browned.
Drain the excess grease.
Add diced onions to the ground beef, cook, stirring occasionally until onions are softened, about 5- 6 minutes.
Meanwhile, cook the rice. Add 1 cup of long grain white rice to a pan with 2 cups of water. Bring the mixture to a boil. Lower to simmer, cover and cook 15 minutes. Remove from heat.
Cook the bacon until crisp. Drain on paper towels. Crumble when cooled.
Add cream cheese, shredded cheese, milk to the ground beef mixture. Stir until cream cheese is mixed in.
Stir in bbq sauce.
Add garlic, smoked paprika, salt and pepper and mix to combine.
Stir in cooked rice and crumbled bacon.
Garnish with diced tomatoes and pickles if desired.
Notes
Storage: Store leftover rice in an airtight container in the refrigerator up to 4 days.
Reheat: Reheat rice in a pan with about 1- 2 tablespoons of milk over medium heat, stirring until heated through.
