Bacon Cheeseburger Rice

Ingredients

  • 1 1/2 pounds ground beef
  • 1 cup diced onion
  • 1 cup long grain white rice
  • 2 cups water
  • 6 slices bacon
  • 2 ounces cream cheese
  • 1/2 cup milk
  • 2 1/2 cups shredded colby jack cheese
  • 1/2 cup barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon granulated garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Diced tomatoes optional garnish
  • Pickle Slices optional garnish

Instructions

  • Add ground beef to a skillet and cook over medium-high heat, breaking the ground beef up as it cooks. Cook until well browned. 
  • Drain the excess grease. 
  • Add diced onions to the ground beef, cook, stirring occasionally until onions are softened, about 5- 6 minutes.
  • Meanwhile, cook the rice. Add 1 cup of long grain white rice to a pan with 2 cups of water. Bring the mixture to a boil. Lower to simmer, cover and cook 15 minutes. Remove from heat.
  • Cook the bacon until crisp. Drain on paper towels. Crumble when cooled.
  • Add cream cheese, shredded cheese, milk to the ground beef mixture. Stir until cream cheese is mixed in. 
  • Stir in bbq sauce. 
  • Add garlic, smoked paprika, salt and pepper and mix to combine.
  • Stir in cooked rice and crumbled bacon. 
  • Garnish with diced tomatoes and pickles if desired.

Notes

  • Storage: Store leftover rice in an airtight container in the refrigerator up to 4 days.
  • Reheat: Reheat rice in a pan with about 1- 2 tablespoons of milk over medium heat, stirring until heated through.
