- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cups diced onion
- 1 cup diced bell peppers
- 3 garlic cloves minced
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground pepper
- 2 teaspoons brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 pound cooked chicken diced
- 4 cups chicken broth
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese plus more for garnish
- 1/2 cup grated Jarlsberg cheese or Swiss
- 5 ounces fontina cheese cubed
- 4 ounces cream cheese cubed
- 16 ounces penne pasta cooked according to package directions, drained
- 1 tablespoon fresh parsley chopped
Add olive oil and butter to a large skillet and place over medium heat. When butter is melted, add onions, peppers and garlic. Season with salt, pepper and brown sugar. Cook, stirring often until onions start to brown, about 10 minutes.
Add oregano, thyme and smoked paprika. Stir in chopped chicken and then add chicken broth. Continue to cook about 5 minutes and then lower to simmer.
Whisk in all five cheeses, whisking until cheese are completely melted.
Stir in cooked pasta and cook about 3- 5 minutes.
Remove from heat and allow to rest about 5 minutes.
Garnish with parsley and serve with additional grated parmesan if desired.
Store leftover pasta in an airtight container in the refrigerator for up to 3 days.
Reheat in a skillet over medium heat. Add additional chicken broth if desired, stirring until heated through.
