Cheddar Beer Bread

Ingredients

  • non-stick cooking spray
  • 3 cups all purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 cups shredded cheddar cheese divided
  • 12 ounces beer any brand will work, we used Guinness
  • 1/4 cup melted butter

Instructions

  • Preheat oven to 350°.
  • Spray a 9 x 5 loaf pan with non-stick cooking spray or coat with butter.
  • Add flour, sugar, baking soda and salt to a mixing bowl and stir together.
  • Set 1/4 cup of cheddar cheese aside. Mix in remaining shredded cheddar,
  • Add one beer and melted butter.
  • Mix until well combined.
  • Pour batter into prepared pan and spread evenly.
  • Top with reserved shredded cheese.
  • Bake for 55 to 60 minutes or until a toothpick inserted in center comes out clean.
  • Run a knife around the edges of the pan and remove loaf to a wire rack to cool slightly.
  • Slice and serve warm or at room temperature.

Notes

Store cooled loaf wrapped tightly in plastic wrap or a zip top bag at room temperature 2 days or refrigerated up to 5 days.
Serve slices at room temperature or toasted.
