- non-stick cooking spray
- 3 cups all purpose flour
- 1/3 cup sugar
- 1 tablespoon baking soda
- 1/2 teaspoon kosher salt
- 2 cups shredded cheddar cheese divided
- 12 ounces beer any brand will work, we used Guinness
- 1/4 cup melted butter
Preheat oven to 350°.
Spray a 9 x 5 loaf pan with non-stick cooking spray or coat with butter.
Add flour, sugar, baking soda and salt to a mixing bowl and stir together.
Set 1/4 cup of cheddar cheese aside. Mix in remaining shredded cheddar,
Add one beer and melted butter.
Mix until well combined.
Pour batter into prepared pan and spread evenly.
Top with reserved shredded cheese.
Bake for 55 to 60 minutes or until a toothpick inserted in center comes out clean.
Run a knife around the edges of the pan and remove loaf to a wire rack to cool slightly.
Slice and serve warm or at room temperature.
Store cooled loaf wrapped tightly in plastic wrap or a zip top bag at room temperature 2 days or refrigerated up to 5 days.
Serve slices at room temperature or toasted.
