- 1 cup butter room temperature
- 1 1/2 cups sugar
- 2 eggs
- 2 teaspoons vanilla
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
for rolling the cookies
- 1/3 cup sugar
- 2 teaspoons cinnamon
Preheat oven to 375°.
Add softened butter and 1 1/2 cups sugar to a mixer bowl and beat with an electric mixer until fluffy, about 1 - 2 minutes.
Mix in eggs and vanilla until combined.
Add flour, baking soda and cream of tartar and mix until combined.
In a small bowl, combine 1/3 cup of sugar with cinnamon.
Scoop cookie dough into 1 1/2 inch balls and roll in cinnamon sugar.
Place about 3 inches apart on a lined baking sheet.
Bake 10- 12 minutes or until lightly browned.
Cool on cookie sheet 2 minutes and move to a wire rack to cool completely.
Store cooled cookies in an airtight container up to 4 days.
