Watermelon Mojitos

Watermelon Mojitos are a refreshing and delicious cocktail for summer time. It's so simple to make these watermelon and rum cocktails for weekend get togethers or just for sipping by the pool!

Ingredients

  • 4 cups watermelon chunks
  • 2 limes one for garnishing
  • 10 fresh mint leaves plus more for garnish
  • 2 ounces simple syrup
  • 8 ounces Sprite
  • ice

Instructions

  • Place 3 - 4 chunks of watermelon, 5 mint leaves and squeeze 1/2 lime into each glass.
  • Muddle with a cocktail spoon or wooden spoon.
  • Add rum, simple syrup and ice. Top with Sprite.
  • Garnish with a slice of lime and fresh mint.
