Homemade Mac and Cheese

- 12 oz macaroni pasta
- 2 tablespoons butter
- 2 tablespoons all purpose flour
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup milk
- 4 ounces cream cheese
- 2 cups shredded cheese I used colby-jack and smoked gruyere
Cook macaroni according to package directions and drain well.
Melt butter in a saucepan over medium heat. Whisk in flour, garlic, salt and pepper, cooking until mixture just starts to brown.
Add milk and whisk until mixture thickens.
Cut cream cheese into cubes and combine into sauce.
Lower heat to a simmer and whisk in shredded cheese.
Stir in macaroni and serve immediately.
Cheddar, gouda or Swiss cheese are great options for the shredded cheese or any combination.
For Baked Mac and Cheese:
- Boil your macaroni for about 6 minutes and drain it. The pasta will continue to cook in the oven. Follow the same sauce instructions.
- Place in an oven safe dish. Top with a mixture of crushed Ritz crackers and melted butter or additional shredded cheese.
- Bake at 350° for about 25 minutes.
