- 2 tablespoons olive oil
- 1 medium onion diced
- 1 10 oz can cream of mushroom soup
- 1 cup milk
- 1 8 oz can water chestnuts drained and chopped
- 6 oz shredded cheddar cheese
- 1 teaspoon granulated garlic
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- 4 cups cooked rice
- 1 pound cooked broccoli florets
- 2 cups French fried onions
Preheat oven to 375°.
Add olive oil to a skillet with onions and cook over medium- high heat until onions are softened.
Remove from heat and stir in cream of mushroom soup, milk, 1 cup of cheese, chopped water chestnuts, garlic, salt and pepper.
Roughly chop cooked broccoli.
Add cooked rice to a 9 x 9 inch baking dish. Top with broccoli and cheese sauce. Mix until well combined.
Spread rice mixture evenly.
Top with remaining cheese and fried onions.
Bake for 25- 30 minutes or until heated through.
