Molasses Cookies

Molasses Cookies are chewy and delicious. Baked with cinnamon and ginger, these are the old fashioned favorite that we all grew up with. Great for holiday baking or to enjoy any time of year.

Ingredients

  • 3/4 cup softened butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup molasses
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/3 cup sugar for rolling

Instructions

  • Preheat oven to 375°.
  • In a large mixing bowl, add softened butter and beat until creamy.
  • Add sugar and brown sugar and beat until fluffy.
  • Pour in molasses, add egg and vanilla and continue to beat until combined.
  • Add flour, baking soda, salt, cinnamon and ginger, mixing well. Scrape down sides if needed.
  • Scoop into about 1 1/2 tablespoon size balls and roll in sugar.
  • Place on a greased or lined baking sheet about 2 inches apart.
  • Bake for 11-14 minutes or until edges are crisp.
  • Remove to a wire rack to cool.
  • Store cooled cookies in an airtight container.
