Brisket Taquitos

Brisket Taquitos are one of my favorites for leftover smoked brisket spiced up with delicious Tex-Mex flavors for a quick and easy dinner. Also makes a great snack or game day appetizer.

Ingredients

  • 1/2 pound smoked brisket shredded or chopped
  • 1/2 cup salsa verde
  • 1 teaspoon granulated garlic
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 cup shredded cheese cheddar or colby-jack
  • 1/4 cup chopped fresh cilantro
  • 10 fajita size flour tortillas
  • non-stick cooking spray

Instructions

  • Add brisket, salsa verde and seasonings to a skillet and place over medium-high heat. Cook, stirring often until heated through.
  • Stir in cheese and cilantro until well combined.
  • Preheat oven to 400 degrees.
  • Spray or line a baking sheet.
  • Spoon filling over center of each tortilla and roll up tightly.
  • Place seam side down.
  • Spray with non stick cooking spray.
  • Bake for 12-15 minutes or until lightly browned.
  • Remove from oven and serve immediately.
  • Garnish with your favorite Mexican condiments.
