Brisket Taquitos
Brisket Taquitos are one of my favorites for leftover smoked brisket spiced up with delicious Tex-Mex flavors for a quick and easy dinner. Also makes a great snack or game day appetizer.

- 1/2 pound smoked brisket shredded or chopped
- 1/2 cup salsa verde
- 1 teaspoon granulated garlic
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 cup shredded cheese cheddar or colby-jack
- 1/4 cup chopped fresh cilantro
- 10 fajita size flour tortillas
- non-stick cooking spray
Add brisket, salsa verde and seasonings to a skillet and place over medium-high heat. Cook, stirring often until heated through.
Stir in cheese and cilantro until well combined.
Preheat oven to 400 degrees.
Spray or line a baking sheet.
Spoon filling over center of each tortilla and roll up tightly.
Place seam side down.
Spray with non stick cooking spray.
Bake for 12-15 minutes or until lightly browned.
Remove from oven and serve immediately.
Garnish with your favorite Mexican condiments.
