- 2 pounds boneless skinless chicken breasts
- For the marinade:
- 1/2 cup vegetable oil
- juice of 1 lime
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon kosher salt
- 1/2 teaspoon pepper
- 8 baked tostadas
- 1/2 cup shredded cheese I like Colby- Jack
- 2 cups shredded lettuce
- 1 avocado peeled and diced
- 1 cup pico de gallo
- 1 lime sliced
Slice chicken breasts into 2 - inch strips. Mix marinade together and add chicken, stirring to coat well. Cover with plastic wrap and refrigerate for 1-2 hours.
Preheat grill. Add chicken to grill and discard marinade.
Cook 8-10 minutes, turning to cook on both sides until cooked through (165 degrees internally).
Remove from grill and allow to rest 3- 4 minutes.
Cut chicken into bite- sized pieces.
Sprinkle each tostada with cheese and place on a baking sheet. Place under the broiler for about a minute, just until cheese is melted.
Top with chicken, lettuce, pico de gallo, and avocado and a squeeze of lime.
Serve immediately.
