Mini Tomato Pesto Tarts

Ingredients

  • 1 9 oz package Mini Fillo Shells
  • 4 oz cream cheese softened
  • 2 tablespoons plain Greek yogurt
  • 3 tablespoons basil pesto
  • 1/3 cup diced tomatoes
  • 1 tablespoon fresh basil sliced thin
  • pinch of kosher salt

Instructions

  • Preheat oven to 375 degrees.
  • In a small bowl, combine cream cheese, Greek yogurt and pesto.
  • Spoon into fillo shells and place on a baking sheet.
  • Bake for 12 minutes.
  • Remove from oven and allow to cool 5 minutes.
  • Mix tomatoes with basil and salt. Top fillo shells and serve immediately.
