Peach and Ginger Braised Short Ribs

Ingredients

  • 3 to 4 pounds beef short ribs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1 tablespoon bacon fat
  • 2 cups brewed coffee
  • 1 teaspoon minced garlic

for the sauce:

  • 1 cup Bonne Maman Peach Preserves
  • 1/2 cup orange juice
  • 1 inch chunk fresh ginger peeled and sliced
  • 1 teaspoon minced garlic
  • 2 tablespoons soy sauce

Instructions

  • Preheat oven to 350 degrees.
  • Pat short ribs with paper towels to dry and season with salt and pepper. Add bacon fat to braiser and place over medium-high heat. Add ribs and brown on all sides. Pour brewed coffee over ribs and add 1 teaspoon minced garlic. Cover and place in the oven.
  • Just before short ribs come out of the oven, prepare the sauce.
  • In a small sauce pan add all of the sauce ingredients and cook, stirring often until it comes to a slight boil. Lower to simmer and for 5 minutes. Remove from heat.
  • Remove ribs from the braiser and drain cooking liquid. Pour sauce into braiser and add ribs, turing to coat.
  • Place over very low heat and simmer 30 minutes or until ready to serve.
