Preheat oven to 350 degrees.
Pat short ribs with paper towels to dry and season with salt and pepper. Add bacon fat to braiser and place over medium-high heat. Add ribs and brown on all sides. Pour brewed coffee over ribs and add 1 teaspoon minced garlic. Cover and place in the oven.
Just before short ribs come out of the oven, prepare the sauce.
In a small sauce pan add all of the sauce ingredients and cook, stirring often until it comes to a slight boil. Lower to simmer and for 5 minutes. Remove from heat.
Remove ribs from the braiser and drain cooking liquid. Pour sauce into braiser and add ribs, turing to coat.
Place over very low heat and simmer 30 minutes or until ready to serve.
