- 5 boneless pork chops
- 1/4 cup olive oil
- zest and juice of 1 lemon
- 1 tablespoon minced garlic
- 1 tablespoon dry ranch dressing seasoning mix
- 1/2 teaspoon Kosher salt
- 1 whole fresh pineapple optional
In a shallow bowl, whisk together olive oil, lemon zest and juice, garlic, ranch dressing seasoning mix and salt. Dredge pork chops in marinade, coating both sides. Place in a zip top bag and pour remaining marinade over and seal.
You can also use a shallow bowl and cover with plastic wrap. Refrigerate for at least one hour.
Cut top and bottom from pineapple. Slice in half and cut into half moons.
Preheat grill. Place pork chops on grill and cook, turning in about every 3 minutes, until pork chops are cooked through.
When pork chops are nearly cooked, add pineapple to the grill and cook about 2 minutes per side.
Remove from grill and serve immediately.
