- 2 racks pork spare ribs
- 1/4 cup kosher salt
- 1/4 cup pepper
- 2 tablespoons granulated garlic
- 1 cup brown sugar
Place spare ribs on a large platter.
Combine salt, pepper and granulated garlic.
Season each side of rib racks with about 1 tablespoon of seasonings.
Mix remaining seasonings with brown sugar and set aside.
Make a bed of coals and sear ribs racks on both sides, until meat just starts to brown.
Add hickory grilling wood to smoker and add ribs to grates, away from the fire and close the lid.
Monitor your smoker to keep the heat around 250 degrees.
Smoke ribs for 2 hours or until internal temperature reaches 185-190 degrees.
Remove from grill and allow to rest 5-10 minutes before slicing and serving.
