GROUND BEEF BARLEY SOUP

Sauté onions, carrots and celery. Brown the ground beef.

Make a dark roux in a dutch oven with butter and all purpose flour. Add water or beef broth.

Stir in cooked vegetables, browned ground beef and cooked barley.

Simmer 20- 30 minutes.

Serve with salad and cornbread muffins.
