Chicken Fajitas

Slice boneless chicken into strips.

Whisk together olive oil, pineapple juice, garlic, cumin, chili powder, salt & pepper. 

Add the chicken to marinade. Cover and refrigerate 1- 2 hours.

Slice onions & bell peppers. Toss with olive oil, season with salt and pepper. Cook on a griddle on the grill or stovetop for 10 minutes.

Remove chicken from marinade and add to the griddle. Cook, stirring often.

Cook until vegetables are softened and chicken is cooked through. 

Remove to a serving platter. and garnish with lime slices and cilantro.

Serve on warmed tortillas with favorite toppings.
