Dublin Coddle Irish Stew

Prep ingredients: Slice  potatoes, onions, carrots, smoked sausage.

Cook the bacon.

Cook the onions and carrots. Then stir in sausages, cooking another 3 - 5 minutes

Layer sausage and vegetables with potatoes. Season with salt and pepper.

Top with bacon, add chicken broth slowly, keeping layers in tact.

Cover and cook for 45 minutes. Add more broth if needed. Return to oven to cook another30 minutes.

Remove lid and cool 5 - 10 minutes before serving.
