During the month of February I have been celebrating my new KitchenAid Waffle Baker with Waffle Wednesday. This week I’m taking the Buttermilk-Oat Waffles and making a superb breakfast sandwich.
These Waffle Breakfast Sandwiches would be ideal for brunch or for those day that you need the kind of breakfast that sticks to your ribs.
I fried a couple of eggs, then I threw slices of ham in the skillet, placed a slice of my favorite Dubliner cheese in between and placed it in between a couple of toasted waffles. It was heaven!
Now for that Waffle Breakfast Sandwich recipe, it’s so easy and I know you are going to love it!
Waffle Breakfast Sandwiches
- 1 whole Belgian Buttermilk-Oat Waffle
- 1 tablespoon butter
- 2 eggs
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 2 slices ham
- 2 slices Dubliner Cheese
- fresh tomatoes for garnish
Separate waffle into 4 sections and lightly toast.
Melt butter in a skillet over low heat. Add eggs and season with salt and pepper. Break yolk and flip eggs as they start to set. Cook until egg is cooked to desired consistency.
Set eggs aside. Place ham slices in the skillet and turn heat up to medium. Cook ham on both sides just until heated through. Layer egg, cheese and ham over waffles and top with remaining waffles. Serve with fresh tomatoes.
Yield: 2 sandwiches
