    Ultimate Cheese Burger

    This is one heck of a burger, inspired by my favorite burger at a local 50's style diner.  This burger is for serious burger lovers only.  The patty is a whopping ½ pound of pure ground beef, topped with pepper jack cheese, sauteed mushrooms, lettuce and fresh guacamole all on a toasted rustic ciabatta roll.  A real man pleaser you might say; no one's going away hungry after eating one of these.  And no, I didn't count the calories!  I've been burning plenty chasing crazy cows or sometimes they are chasing me!  Sometimes when heifers have their first baby they freak out a little and it can get interesting in the cow pen!  Running through the mud and the muck can wear you down and this is the kind of meal that keeps us going.  What else can I say, this is the ultimate burger!

    Recipe: Ultimate Cheese Burger

    Ingredients

    for burger:

    • 2 pounds lean ground beef
    • 1 teaspoon sea salt
    • ½ teaspoon fresh ground pepper
    • ¼ cup butter, divided
    • 8 oz mushrooms, sliced
    • ½ cup pepper-jack cheese, shredded
    • 4 rustic ciabatta rolls, or hamburger buns

    for guacamole:

    • 3 ripe avocados
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon mayonnaise
    • 1 teaspoon salt
    • ¼ teaspoon fresh ground pepper
    • 1 teaspoon granulated garlic
    • 2 green onions, diced
    • 3 dashes Louisiana Hot Sauce
    • mayo, mustard, lettuce, onion for garnish

    Cooking Directions

    for hamburger patties:

    Form ground beef into four half pound patties, season with salt and pepper. Fry or grill on each side for 4-5 minutes per side, until cooked through.

    Meanwhile, in a medium skillet melt 2 tablespoons butter and add mushrooms, cooking until they just start to brown. Set aside.

    for guacamole:

    Peel and seed (set the seed aside, don't throw it away). In a medium size bowl, add avocados and lemon juice and mash with a fork until mostly smooth. Stir in remaining ingredients. Place avocado seed in center and set aside. The seed will keep your guacamole from turning brown. Try it, it works!

    When patties are cooked and still hot, top with mushrooms and pepper-jack.

    Burger assembly: Spread rolls with remaining butter and lightly toast. Spread with desired condiments and layer hamburger patty (topped with mushrooms and cheese), guacamole and lettuce and onion if desired.
