Getting back in a routine for school is always tough around our house. Emmet comes in completely starving and I rely on quick and easy dinners to help get us back on track.
Like everything else, I need my grocery shopping trips to be quick and easy. I made a trip to Krogers, where they have a great selection of organic items that you can feel good about feeding your family.
I found Horizon Macaroni and Cheese, SIlk Soy Milk and added in some diced chicken and salsa for a quick and easy, five ingredient meal that my family loved. Seriously, it doesn’t get any easier than this.
On the weekends, I like to make a tentative meal plan. I cook up a big batch of chicken breasts or ground beef try to take the time to prep fresh veggies by washing them and cutting them up. This makes getting dinner on the table so much easier and I know if I have a plan, I’m not stressing after a busy day about how I’m going to get dinner on the table.

- 1 box Horizon Macaroni and Cheese
- 2 tablespoons butter
- ⅓ cup Silk Soy Milk
- ⅓ cup salsa
- 2 cups cooked and diced chicken
- Diced avocado and cilantro for garnish *optional
- Boil macaroni and drain. Add butter, soy milk, salsa and cheese packet to a sauce pan and stir to combine. Add drained macaroni and chicken and cook over medium heat until heated through. Serve immediately. Garnish with avocado and cilantro if desired.
