This recipe turned out perfectly! I think people may be failing to squeeze all of the water out after rinsing the salt off. You really have to remove as much liquid as you possibly can. Perfect for slaw, potato salad and deviled eggs! Yummy!

Just made this a read some of the comments prior. I reduced the sugar to two cups and squeezed the vegetable mixture a great deal. My yield was 8 1/2 pints and the taste is not too sweet and will pair well in any recipe or on a hot dog etc. thanks so much! Also used one red and one green pepper for color.

I keep the extra juice to pour in potato salads or coleslaw even then i use for refrigerator pickles. I have made several pickle relish over the years and this recipe is the best!!

The sure jell used in jam has citric acid in it that preserves the fruit & canning peaches usually among other things has citric acid or a bit of lemon juice which is a preservative

My original recipe called for 12 large cucumbers. Maybe that's why there is too much liquid and too sweet. Mine was just fine. I wanted to make some, but my recipe book got packed for a move and I wasn't sure just how much sugar to put in. My recipe called for 2 each red and green peppers and 2 onions.

This recipe made 3 1/2 pints of relish after straining the liquid. I put 3 - 1 pint jars of relish into my canning storage and put the last 1/2 pint into my fridge for immediate consumption. It was FANTASTIC!! The relish tastes really well as a substitute for ketchup on hotdogs!
Rather than wasting the extra liquid, I would think that you could take the remaining liquid and make a sweet and sour salad dressing with a few additional ingredients.

He should have returned the jars to the water bath for at least 15 minutes. Your jars are at risk. When you get around to opening one, if it smells and/or tastes the least bit odd, throw it out and do not consume it.
