    Smoked Gouda and Spinach Rice Casserole

    Rice is one of my favorite things to eat and I am always looking for new recipes.  I found this fantastic recipe at Cooking.com, from the USA Rice Federation.  At Cooking.com they have a wide range of recipes like rice casseroles, 30 minute soups, desserts and more.  You can even submit recipes and leave reviews for those you have tried, I'm giving this one five measuring cups for delicious!

    There is something very comforting about a cheesy rice casserole and this one has spinach and mushrooms for a filling and nutritious side dish that is ready in no time.  Plus it has smoked Gouda, and who can resist smoked cheese?   I paired this with sirloin steak and Colby-Jack Beer Bread, it was a very enjoyable meal.

    Smoked Gouda and Spinach Rice Casserole

    Ingredients:

    3 tablespoons oil

    ½ cup finely chopped shallots

    2 cups sliced mushrooms

    3 cups hot cooked long grain white rice

    1 10-ounce package frozen chopped spinach, thawed and drained

    2 cups shredded smoked Gouda cheese, divided

    ½ cup whipping cream

    Salt and pepper to taste

    Cooking Directions:

    Preheat broiler. Heat oil in large skillet over medium-high heat. Add shallots and mushrooms; saute about 6 to 8 minutes or until tender. Add hot rice, spinach, 1 ¼ cups cheese and cream; stir until cheese melts and mixture is heated through. Spoon mixture into lightly greased 2-quart casserole. Sprinkle remaining ¾ cup cheese over top. Broil about 2 minutes or until cheese melts.
