Football season is upon us, and game day food is a must. I have a super quick dip for you that will knock your socks off. Roasted red peppers with cumin and a hint of cilantro for a new twist on the classic Tex-Mex dip flavors. This would also be a great addition to tacos and I'm thinking of trying it with grilled chicken. Many possibilities!
Santa Fe Roasted Red Pepper Dip
Ingredients:
½ cup mayonnaise
½ cup sour cream
½ cup roasted red pepper
¼ cup cilantro
1 tablespoon diced green onion (white parts only, save green parts for a garnish)
1 teaspoon fresh lemon juice
Dash hot sauce
½ teaspoon granulated garlic
1 teaspoon ground cumin
½ teaspoon salt
Directions:
Add all ingredients into a food processor or blender and process for 30 seconds, remove lid and scrape down sides. Continue to process for 1 minute. Pour into serving bowl, garnish with green onion tops. Cover and refrigerate for at least 30 minutes for flavors to meld. Serve with tortilla chips, tacos, or burritos.
