Popeye Rice a tasty rice dish with spinach and caramelized onions. I could eat rice everyday, but my family could never eat rice again and be just fine. So I try to add ingredients to create rice dishes with lots of flavor. This one was a keeper, even my pickiest eater polished it off. So I hope you give this a try, I think you’ll like it.
1 cup long grain white rice
1 14.5 oz can chicken broth
1 cup frozen spinach, thawed
1/2 cup diced onion
1/2 cup Swiss cheese, grated
3 tablespoons butter, divided
1 teaspoon salt
1 teaspoon Mrs. Dash seasoning blend
In a medium size pot, melt 1 tablespoon butter and add rice. Cook for 2 minutes, add chicken broth, salt and Mrs. Dash, bring to a boil, then turn down to simmer and cover. Allow rice to cook about 15 minutes, undisturbed. Meanwhile, In a small pan add remaining 2 tablespoons butter and onion, stirring occasionally. Cook onions until they just start to brown. Squeeze excess water out of spinach and add to onions. Cook 2 minutes stirring frequently. When rice is cooked, stir in spinach and onion mixture and Swiss cheese, stirring until well combined. Yummy goodness.
