Every time I make homemade ricotta cheese, I stop and wonder why I don’t make it every week. It is so, so delicious, far superior to what you get in the little container from the store. It only takes minutes to make. Seriously easy, seriously delicious.
I usually toast a baguette, spread a little ricotta, drizzle with olive oil, a sprinkle of coarse salt and a little rosemary. I can just stand at the counter and eat it until I can’t move. I’ve seen several appetizers with ricotta and honey and so I did a little experimenting.
I figured I would be the only one that would eat a combination of rosemary, honey and pomegranate. I thought it would be viewed as chick food. I was mistaken. The boys came through and starting eating them. There was one left on the plate when they realized they should save one for Dad. I told them I could make more, which I did and Dad still didn’t get to try them!
It seems a little fancy for an afternoon snack but it’s simple so, why not? Of course these would be fabulous for a party or any get together and even for last minute guests. What is your go to afternoon snack?
Pomegranate Ricotta Toasts with Honey & Rosemary
- 2 slices sandwich bread
- 3 tablespoons homemade ricotta cheese ( I used Ina Garten’s recipe, super easy)
- 1/2 teaspoon rosemary, chopped
- 2 tablespoons pomegranate arils
- 2 teaspoons honey
Cut bread into 2 inch circles with a biscuit cutter. Place on a small baking sheet and toast lightly. Remove and place on serving platter or plate.
Spread about 1 teaspoon ricotta onto each toast circle. Sprinkle with rosemary and pomegranate arils. Drizzle with honey.
