At first glance, I thought your bowl of pineapple pico was a salad, and I was like “I’d eat that!” Even after I realized it wasn’t, I would still totally eat it 🙂 This is the kind of simple thing I like eating for lunches throughout the year. So fresh and flavorful, but still light!
