    Pineapple Glazed Chicken Cutlets

    Pineapple Glazed Chicken Cutlets

    This is a great recipe when you don't have time to marinate.  I have to admit that it's not very often that I have the time or the forethought to marinate anything.  I love it, but I just don't get there.  This glaze takes ordinary chicken to new heights of flavor.  It is of course quick and easy, with just a few ingredients.  Perfect to serve over rice, a green salad, or in a sandwich.  The glaze would also be good on pork.  Delicious!

    Pineapple Glazed Chicken Cutlets

    Ingredients:

    2 pounds chicken cutlets (or any chicken pieces)

    2 tablespoons olive oil

    1 teaspoon coarse salt

    ½ teaspoon fresh ground pepper

    ⅓ cup pineapple juice concentrate

    2 tablespoons honey
    (a special note and honey tip: use local honey if you can, it's good for you!  When measuring honey, spray your spoon or measuring cup with non-stick cooking spray and it will slide right out!  Try it, it works.)

    1 clove fresh garlic, minced

    1 tablespoon fresh thyme

    Cooking Directions:

    Pre-heat grill.  Pour olive oil, salt and pepper over chicken and toss to coat.  In a small bowl combine pineapple juice concentrate, honey, garlic and thyme.

    Cook chicken over medium-hot coals until almost cooked through.  Brush with pineapple glaze turning as you coat each side.  Continue to cook until chicken is thoroughly cooked.  Remove from grill and allow to rest about 5 minutes before serving.
