Now is the time to make up for the lack of dessert recipes during the weeks of the Emeril One-Pot Cooking Party. Onto this quick and easy dessert that also happens to be down right delicious. A soft peanut butter bar stuffed with chopped up Oreos, that sounds good doesn’t it? They are really simple but perfect for the peanut butter-chocolate lover in all of us. You could tote these to potlucks or barbecues and I think they will be on my go to list for school parties.
Here’s the recipe, I’ve got to go have another one before the boys eat them all!
Peanut Butter-Oreo Blondies
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 12 oreos, coarsley chopped
Pre-heat oven to 375 degrees.
Grease or spray a 8 x 11 1/2-inch baking dish.
In a large mixing bowl, cream butter and peanut butter together with an electric mixer. Add sugar mixing until combined. Add eggs and vanilla beating until all combined. Add flour and baking soda, mixing thoroughly. Add chopped Oreos and mix for about 1o seconds.
Pour into a baking dish, spreading evenly. Bake for 25 minutes or until lightly browned. Cool slightly and cut into squares. Serve warm or at room temperature. Store in an airtight container.
