These are the chicken wings I made for our Super Bowl feast a few week ago. The orange marmalade glaze is really easy and works well with any chicken. I have made it with chicken breasts, thighs and legs, all yummy! I like to bake chicken in the oven, I just pop it in and then go do something else. I added about 2 teaspoons of crushed rosemary to this glaze when I made chicken thighs. The rosemary adds another dimension of flavor. Try it sometime, you’ll like it.
Orange Marmalade Chicken Glaze
1 cup orange marmalade
2 tablespoons water
1 tablespoon lemon juice
1 teaspoon granulated garlic
Chicken pieces of your choice
In a small saucepan add all ingredients. Cook over medium heat, stirring until it starts to bubble. Remove from heat. Pour into food processor or blender and process for 30 seconds. Cool slightly and brush over chicken. Bake uncovered at 375 degrees. Half way through baking, spoon remaining glaze over chicken.
