Don’t you love oatmeal cookies? Well these are souped up with chocolate covered raisins. I could eat the whole pack of chocolate covered raisins by myself and then I don’t feel so well. Using my head here, I decided to put them in the oatmeal cookies and spread them around a little. They received rave reviews from the guys. I’m thinking these would work as school snacks too, oatmeal, raisins, all good for you. As usual I have a super busy week ahead and these cookies will be great to grab on the go. Oatmeal Cookies with Chocolate Covered Raisins
3/4 cup butter, softened
1 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
1 3/4 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
2 cups oats
12 oz (1 1/2 cups) chocolate covered raisins
Pre-heat oven to 375 degrees. In a large mixing bowl, beat butter and sugars together, add eggs and vanilla, and beat until all combined. Add flour, baking powder, cinnamon, and oats. Beat until combined. Stir in chocolate covered raisins. Scoop onto cookie sheets with a cookie scoop or in 1 1/2-inch balls about 2-inches apart. Bake for 10 to 12 minutes or until lightly browned. Remove to wire rack to cool.
