Hi Karen,
 You can use a regular muffin pan, but I think it might only make 6, also cooking time might be a bit longer.  Use a cupcake liner to make it easy to remove the cheesecakes.

 Yes, wrap them in 2 layers of plastic wrap and place in a freezer bag or wrap in another layer of foil. Should be good up to 3 months.
