Hi Stacy,
Either will work, I always use salted butter. I hope you try them!

Hi Sue,
I have made this so many times and have never had trouble with the crust being too hard. It is possible that your oven bakes a little hotter, overcooking the crust or maybe a little too much flour. The crust should be firm but not so hard that you can't cut it. I hope this helps.

Hi Carmella,
The butter doesn't have to be cold and there's no need to cool the crust before adding the filling since you put it right back in the oven. I hope that helps.

Hi Dom,
I have made this countless times with no issues on the crust. The crust should only be lightly browned when you add the lemon filling. Ovens can vary and it might be something like that. I'm sorry it didn't turn out for you.

Something went very wrong here for me, and I'm not entirely sure what. When I first took the crust out of the oven the edges were beginning the burn but the center wasn't done. I put the filling in, and popped it in on another rack. The filling and frosting came out great, however the crust is HARD. I'm not sure if I didn't cut the butter in right or what, I timed it and everything.
