- Have you tried quinoa? I had seen so many recipes and read about it on the Internet, but only recently did it become available around these parts. It’s grain-like and it cooks just like rice, but has more flavor and a little different texture. It is very high in protein and contains essential amino-acids, plus it is gluten-free. The box that I bought stated that it had been pre-rinsed, because in it’s natural state there is a bitter coating.
- As you well know I am way more about the sweets and deep fried foods than the healthy good for you stuff. My husband and kids are really meat and potatoes kind of eaters, literally! But I am here to tell you, we all liked it a lot. I was expecting everyone to taste it and turn up their noses; however, they ate every bite! They also say this makes a great breakfast, kind of like oatmeal. Many possibilities to try and I will be experimenting with this new addition to my pantry. Pick some up next time you shop, it is really good and good for you too.
- Lemon and Basil Quinoa
1 cup quinoa (rinsed if it hasn’t been pre-rinsed)
2 cups chicken broth
1 tablespoon butter
2 teaspoons lemon juice
1/2 cup Parmesan cheese, grated
1 tablespoon fresh basil (or 1/2 tablespoon dried)
Add quinoa and chicken broth in a saucepan. Bring to a boil, cover, reduce heat to simmer and cook 10 to 15 minutes or until liquid is absorbed. Remove from heat and stir in remaining ingredients. Serve immediately.
