    Grilled Ham & Swiss with Avocado Mash

    Fall has officially arrived around here, we've had much cooler weather, football games, and finally we are finished baling hay!  However, life continues to be busier than ever and I am usually scrambling to get supper on the table as quickly as possible.   I also find myself wishing I had a personal organizer/assistant, that would say,"Miss, you are having this for supper and I thawed the meat for you, and I finished up your laundry."  Okay, that's just a dream and it is so not happening!   Back to real life here; on the way to pick up the boys from practice I stopped by the store and found deli ham on sale, picked up a couple of ripe avocados, and some Texas toast.  The results were a very flavorful and pretty darn good, especially for not really having a plan.  The savory ham with the creamy avocado and melted cheese was a great combination.  I often write down ideas that I get and stick them on the refrigerator, but I don't always have a plan.  I make it up as I go most of the time.  Don't be afraid to experiment, you know what you like and it's pretty easy to mix it up and have something different and delicious.  A  great tasting meal doesn't have to mean that you spend all day in the kitchen!

    Grilled Ham & Swiss with Avocado Mash

    Ingredients:

    2 avocados

    1 teaspoon lime juice

    1 tablespoon mayonnaise

    1 teaspoon granulated garlic

    ½ teaspoon salt

    ¼ teaspoon pepper

    12 slices Texas toast

    ¼ cup butter, softened

    9 oz deli sliced black forest ham

    6 oz Swiss cheese, shredded

    Cooking Directions:

    Peel and seed avocados, setting one seed aside.  In a medium size bowl,add sliced or chunked avocados, lime juice, mayo, garlic, salt and pepper.  Smash with a fork until well combined and avocados are pretty smooth.  Place reserved avocado seed in the center, this will keep it from turning brown.  Set aside.

    Butter one side of each slice of Texas toast.  On a hot griddle, place a slice of Texas toast butter side down, and layer a few slices of ham, about a tablespoon of avocado mash,  then about 2 tablespoons of shredded Swiss cheese and top with another slice of Texas toast, butter side out.  As the toast starts to brown, flip it over to brown the other side.  Repeat with remaining sandwiches.  Perfect served along with a side of roasted potatoes, potato salad or chips!
