    French Toast with Blueberries

    Okay, this has been one of those days where everything goes crazy.  While making this delightful breakfast, I managed to nearly knock myself out on an open cabinet door, leaving a nice little purple knot in the middle of my forehead.  Nice, huh?  Wishing I had bangs today.  Well breakfast was really delish, so I download the photos of the French toast to my laptop and then it died, went kaput, d.e.a.d!  Should I have tried to go back to bed and start over?  Well I have too long of a list for that.  Since my computer bit the dust, the photo above is unedited, but I think you get the idea, despite the shadows.   I love French toast and topped with blueberries and real maple syrup it's an extra special treat.  I used Texas toast, if you haven't noticed, I seemed to be addicted lately.  Our little grocery store doesn't have brioche or specialty breads so I am happy with Texas toast for this recipe, you can use whatever bread you have.  French toast is really quick and perfect for weekday mornings and my kids love it too.  Hope your day was better than mine and I'm sure tomorrow will be better!

    French Toast with Blueberries

    Ingredients:

    2 tablespoons butter

    1 egg

    ⅓ cup milk

    1 tablespoon sour cream

    1 teaspoon vanilla extract

    1 teaspoon sugar

    ½ teaspoon cinnamon

    4 slices bread

    ¼ cup dried or fresh blueberries

    ⅓ cup real maple syrup

    Cooking Directions:

    In a large skillet or griddle, melt butter.  In a shallow bowl or pie plate, add egg, milk,  sour cream, and vanilla.  Whisk together until smooth and well combined.  Whisk in sugar and cinnamon.  Dip each slice of bread into milk and egg mixture on both sides.  Place on griddle, cooking until browned on both sides.  Remove to a plate for serving.  Meanwhile heat maple syrup and blueberries together.  I heated them in the microwave about 30 seconds.  Pour syrup and blueberries over French toast.
